Ingredients

For the dough:

  • 1stick of butter at room temperature
  • 3 oz cream cheese soft
  • 1 egg room temperature
  • ½ cup fructose
  • 1 tsp vanilla extract
  • 1 cup oat flour
  • 1 cup almond flour
  • pinch of salt

For the cranberry filling:

  • 2 cups cranberries
  • ½ cup fructose
  • ½ cup of water (optional)

Instructions

  • Using a hand or standing mixer, beat the butter, cream cheese, and fructose until smooth.
  • Add an egg and vanilla and beat until smooth and fluffy.
  • In a separate bowl, mix flours, salt, and baking soda.
  • Slowly mix in the dry mixture to the wet one until just combined.
  • The dough will be soft, not crunchy.
  • Take 2/3 of the dough and spread it out the pan lined with parchment paper.
  • Top with cranberry sauce, spreading in even layer.
  • Arrange the remaining dough as desired all over top.
  • Bake 30 minutes in preheated to 350*F oven or until the top dough is cooked to golden brown around edges.
  • Cool completely in the pan before serving.
