ZUCCHINI BREAD with WALNUTS  

Zucchini bread I first tried many years ago and was surprised by how tasty it was. Since then, I changed many ingredients and now it is sugar-free, gluten-free, and fat-free. But zucchini is the base that makes this cake Low Glycemic.  

ZUCCHINI BREAD WITH WALNUTS

Ingredients

  • 1.5 cup grated zucchini
  • 5 eggs
  • 2/3 cup fructose
  • 2/3 cup vegetable oil
  • 1.5 cup walnuts chopped
  • Cinnamon
  • 1 tsp baking soda
  • 1.5 cups oatmeal flour
  • 2 cups almond flour

Instructions

  • Combine all ingredients and mix well
  • Grease the baking form with oil spray and sprinkle with flour to prevent sticking
  • Bake 45-50 minutes at 350*F (175*C)
  • Cool completely before removing from the pan

Notes

Zucchini bread tastes better after cooling. Feel free to make it 2-3 days a head.
