ZUCCHINI BREAD WITH WALNUTS
Ingredients
1.5 cup grated zucchini
5 eggs
2/3 cup fructose
2/3 cup vegetable oil
1.5 cup walnuts chopped
Cinnamon
1 tsp baking soda
1.5 cups oatmeal flour
2 cups almond flour
Instructions
Combine all ingredients and mix well
Grease the baking form with oil spray and sprinkle with flour to prevent sticking
Bake 45-50 minutes at 350*F (175*C)
Cool completely before removing from the pan
Notes
Zucchini bread tastes better after cooling. Feel free to make it 2-3 days a head.
