Jello was hardly available when I was a kid growing up in Siberia, so I could eat it very rarely. Maybe that’s why I like it so much now and make it for many occasions. My guests like it too, but usually admit that they do not make jello for dessert. Why not? I would suggest always keep the jello desserts option in mind.

This dessert has made with sugar-free lime and strawberry jelly. It is easy to make, looks appealing, light, and a delicious healthy dessert! If you are willing to go the extra mile, make jelly layers of 2-3 colors, or combine it with fruits and berries.

Directions:

  • Prepare sugar-free jelly following directions on the package
  • Cut strawberries in half keeping a green part
  • Cut mango into small pieces
  • Dry them both on a paper towel to prevent extra liquid in a jelly 
  • Divide fruits between individual dishes
  • Pour liquid jelly above, and refrigerate

Be creative to use other ingredients:

  • Blueberries
  • Raspberries
  • Blackberries
  • Sweet apples
  • Pears
  • Plums
  • Persimmon
  • Tangerines
  • Sunflower seeds
  • Almonds slices
  • Pistachios

You can also use small pieces of dry fruits:

  • Prunes
  • Apricots
