APPLE CAKE   

Apple cake is simple, delicious, low glycemic, sugar-free, and gluten-free. It is suitable for a snack, dessert, or lunch if accompanied by fresh fruits and yogurt.

Ingredients

  • 1 big sweet apple
  •  5 eggs
  • 2/3 cup Fructose or Erythritol
  • 2/3 cup vegetable oil (which is tasteless and odorless)
  • 1 cup oatmeal flour
  • 1 cup nut meal (almonds or hazelnuts ground with skin)
  • 1 tsp. cinnamon
  • 1 tsp. soda
  • 2 tsp. Cream of Tartar
  • ½ cup of blueberries for topping (optional)

Instructions

  • Peel the apple and grate it on a coarse grater
  • Add other ingredients
  • Mix everything except berries, but DO NOT beat
  • If the mixture feels watery, add 1/2 cup of oatmeal flour
  • Spring the glass baking form (about 11x7”) with vegetable oil spray
  • Pour in the mixture
  • If you use blueberries, place them on the top
  • Bake for 40 minutes in a preheated 350*F oven until a wooden toothpick comes out dry
