APPLE CAKE
Apple cake is simple, delicious, low glycemic, sugar-free , and gluten-free . It is suitable for a snack, dessert, or lunch if accompanied by fresh fruits and yogurt.

1 big sweet apple 5 eggs 2/3 cup Fructose or Erythritol 2/3 cup vegetable oil (which is tasteless and odorless) 1 cup oatmeal flour 1 cup nut meal (almonds or hazelnuts ground with skin) 1 tsp. cinnamon 1 tsp. soda 2 tsp. Cream of Tartar ½ cup of blueberries for topping (optional)
Peel the apple and grate it on a coarse grater
Add other ingredients
Mix everything except berries, but DO NOT beat
If the mixture feels watery, add 1/2 cup of oatmeal flour
Spring the glass baking form (about 11x7”) with vegetable oil spray
Pour in the mixture
If you use blueberries, place them on the top
Bake for 40 minutes in a preheated 350*F oven until a wooden toothpick comes out dry
