ALMOND-OATMEAL FRUIT BARS
Almond-Oatmeal Fruit Bars are sugar-free, gluten-free, and low glycemic. They are a proven success! Whenever I serve them at home or bring them to a party, I (or better to say ‘they’) get lots of compliments. People ask for a recipe and want to know all whats, whys, and hows. Try these simple, healthy, and delicious no-guilt bars.
Dough:
- 2 cup Almond meal
- 1 cup oatmeal flour
- 1.5 sticks frozen margarine
- 1 tbsp pure fructose or Splenda®
- ¼ tsp baking powder
- Pinch of salt
Filling:
- 100% Polaner® All Fruit® Strawberry, Raspberry, or Blackberry jam
Directions:
- In a medium bowl, stir together 1.5 cups of the Almond meal with the oatmeal flour, baking powder, and salt.
- Using a knife or pastry cutter, to blend in the margarine. A dough will be crumbly. Place 2/3 of the dough into the baking sheet covered with the baking paper.
- Spread fruit jam over the dough.
- Stir together the rest of the dough with the rest of the almond flour. Crumble remaining dough over the fruit layer.
- Bake at 390*C for 15-18 minutes or until the top is golden. Cool completely on the baking sheet. Cut into bars using a knife.
Weight Loss Help
- The GI of oats flour is 40, and Almond meal is only 15.
- You may use any other jam of your choice, but use 100% fruit jam only.
- Other variations of the filling:
- Thin apple slices sprinkled with cinnamon
- 0% farmer cheese mixed with an egg and a sweetener
What size pan? What temperature? 390C converts to 734F. That can’t be right!

Sorry for the typo. Of course I’ve meant 390*F (180*C). The size of the pan should be about 10×13″. For the better results, use a baking sheet with 0.5″ height walls. Cover all (including walls) with a parchment baking paper, and fill it with 1st part of crumbs, etc’ etc’
This way the jam will be not leaking out, keeping the shape.
