ALMOND-OATMEAL FRUIT BARS

Almond-Oatmeal Fruit Bars are sugar-free, gluten-free, and low glycemic. They are a proven success! Whenever I serve them at home or bring them to a party, I (or better to say ‘they’) get lots of compliments. People ask for a recipe and want to know all whats, whys, and hows. Try these simple, healthy, and delicious no-guilt bars.

Dough:

  • 2 cup Almond meal
  • 1 cup oatmeal flour
  • 1.5 sticks frozen margarine
  • 1 tbsp pure fructose or Splenda®
  • ¼ tsp baking powder
  • Pinch of salt

Filling:

  • 100% Polaner® All Fruit® Strawberry, Raspberry, or Blackberry jam

Directions:

  • In a medium bowl, stir together 1.5 cups of the Almond meal with the oatmeal flour, baking powder, and salt.
  • Using a knife or pastry cutter, to blend in the margarine. A dough will be crumbly. Place 2/3 of the dough into the baking sheet covered with the baking paper.
  • Spread fruit jam over the dough.
  • Stir together the rest of the dough with the rest of the almond flour. Crumble remaining dough over the fruit layer.
  • Bake at 390*C for 15-18 minutes or until the top is golden. Cool completely on the baking sheet. Cut into bars using a knife.

 Weight Loss Help

  • The GI of oats flour is 40, and Almond meal is only 15.
  • You may use any other jam of your choice, but use 100% fruit jam only.
  • Other variations of the filling:
    • Thin apple slices sprinkled with cinnamon
    • 0% farmer cheese mixed with an egg and a sweetener
