ZUCCHINI BREAD with WALNUTS
Zucchini bread I first tried many years ago and was surprised by how tasty it was. Since then, I changed many ingredients and now it is sugar-free, gluten-free, and fat-free. But zucchini is the base that makes this cake Low Glycemic.
ZUCCHINI BREAD WITH WALNUTS
Ingredients
- 1.5 cup grated zucchini
- 5 eggs
- 2/3 cup fructose
- 2/3 cup vegetable oil
- 1.5 cup walnuts chopped
- Cinnamon
- 1 tsp baking soda
- 1.5 cups oatmeal flour
- 2 cups almond flour
Instructions
- Combine all ingredients and mix well
- Grease the baking form with oil spray and sprinkle with flour to prevent sticking
- Bake 45-50 minutes at 350*F (175*C)
- Cool completely before removing from the pan
Notes
Zucchini bread tastes better after cooling. Feel free to make it 2-3 days a head.
