PORK FAJITAS
Pork fajitas are great for celebrating the Mexican holiday Cinco de Mayo or other occasions gatherings. You can serve it on skillets, in Ezekiel sprouted tortillas, or in lettuce wraps.

1 pork tenderloin 1 medium-sized onion 3 bell peppers of different colors (red, yellow, green) 1 tbsp lime juice olive oil for cooking 1 tsp chili powder 1/2 tsp black pepper 1/2 tsp cumin 1/4 tsp red paprika ½ tsp of salt pinch of cayenne pepper (optional) ezekieltortillas or green lettuce for wraps
Slice onion and peppers, and set aside.
Cut the pork into medallions across the fibers first and then cut them into strips to get tender meat.
Cut pork into thin strips and place in a bowl. Toss pork with seasoning, lime juice, and 1 tablespoon olive oil.
Preheat 1 tablespoon olive oil over medium-high. Add the pork in small batches and cook about 3-4 minutes. Set cooked pork aside.
Add 1 tablespoon of oil to the same pan and cook onions for 1-2 minutes. Stir in peppers and cook for 2 more minutes.
Add pork and cook until heated through, but do not overcook. The pork should be a little bit pink inside.
If you choose to serve the meal in Ezekiel tortillas, preheat them in a microwave.
