Ingredients

For the salad:

  • 1 head of butter lettuce
  • ½ pound of raw shrimp
  • ½ can (15.5 oz) garbanzo beans drained
  • ½ can of red beans drained
  • ½ can of white beans with original, NOT drained
  • 1 big garlic clove
  • lemon pepper and white pepper
  • olive oil for cooking

For marinade:

  • ¼ cup of olive oil
  • 2 tbsp fresh lemon juice
  • salt and black pepper

Instructions

  • Combine the beans in a big salad bowl, as shown in the video
  • Mix all marinade ingredients and pour it over the beans
  • Stir gently and put aside to marinade
  • Clean the shrimp, leaving the tails on
  • Heat the oil, add shrimp, and cook for 1 minute from both sides until golden. Do not overcook!
  • Remove from the heat, add chopped garlic, and mix gently
  • Spice with lemon pepper and white pepper
  • Add shrimp to the beans
  • Cut the lettuce and place it on the serving plate
  • Cover with the shrimp-beans mix, and pour the marinade over
  • Garnish with lemon slices
