PANCAKES YELLOW SQUASH
Pancakes yellow squash are great for weekend breakfast or lunch. Add a green salad, and you’ll have a light dinner too!
Ingredients
- 2 yellow squashes
- ½ bunch of scallions
- ½ bunch parsley (or cilantro)
- ½ bunch dill
- 4 eggs
- ½ pound (8oz) of 0% fat Greek yogurt
- Salt, pepper
- 1/2 tsp baking powder
- 1 cup oatmeal flour
- Olive oil for cooking
Directions:
- Peel squashes and grate them on the coarse grader
- Cook chopped scallions on olive oil until soft and dark green
- Chop parsley and dill
- Mix all the ingredients, and let the mixture blend for an hour in a warm place
- Using olive oil, cook for 2-3 minutes on each side on medium heat.
Weight Loss Help
- Glycemic Index of yellow squash is low (<30)
- Glycemic Index of the oatmeal flour is medium (40)
- There is no saturated fat in this recipe
- You can eat them as they are, or with 0% Greek yogurt
- Avoid adding sour cream or butter
