COCONUT PANCAKES  

Coconut pancakes are made with coconut flour, a perfect substitute for wheat flour for kids. Pancakes are easy to make; they are soft and fluffy.

Ingredients

  • 3 eggs
  • ¼ cup unsalted butter melted (see note for dairy-free)
  • ¼ cup heavy cream
  • 1 tbsp of fructose
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract
  • ¼ cup coconut flour
  • ½ teaspoon baking powder
  • olive oilfor cooking

Instructions

  • Whisk together butter, cream, fructose, salt,eggs, and vanilla extract.
  • Add coconut flour and baking powder.
  • Let batter sit to thicken for 10-15 minutes.
  • Heat the skillet over medium heat.
  • Cook on olive oil, placing the batter into the skillet about 2 inches apart.
