OMELETTE with MUSHROOMS and ASPARAGUS

Omelets are great for breakfast, lunch, and dinner. Though chicken eggs are high in cholesterol, the effect of egg consumption on blood cholesterol is minimal. Most of us can enjoy 5-6 eggs a week without a significant impact on raising our blood cholesterol; the body compensates by manufacturing less cholesterol itself.

OMELETTE WITH MUSHROOM AND ASPARAGUS

Ingredients

  • 3-4 clean Bella mushrooms
  • 5 asparagus stems
  • 3 eggs
  • 2-3 slices of cheese of your choice
  • salt, black pepper
  • pinch of nutmeg
  • olive oil for cooking

Instructions

  • Cut mushrooms in thin slices and cook on olive oil as shown in the video
  • Trim asparagus, cut into 1-inch pieces, add to a skillet with mushrooms,continue cooking
  • Beat eggs with salt and pepper, add nutmeg
  • Heat another skillet, add olive oil and pour eggs into the skillet. Cover and lower the heat to a minimum. Cook for 2-3 minutes.
  • Arrange cheese on a plate, remove omelet to the plate, and place mushrooms with asparagus on top.
