BLUEBERRY PANCAKES WITH OATMEAL FLOUR

Ingredients

For a dry mixture:

  • 2 cups of oatmeal flour
  • 1 tbsp of dry milk
  • 2 tbsp of Splenda
  • 2 tsp baking soda
  • 1 tsp salt

For a liquid mixture:

  • 2 cups of Cultured Fat-free buttermilk
  • 1/3 cup warm water
  • 2 eggs
  • ¼ cup of olive oil

Other ingredients:

  • 2 cups of fresh blueberries
  • olive oil for cooking

Instructions

  • Prepare dry and liquid mixtures in separate bowls
  • Start adding liquid to a dry mixture, mixing constantly
  • Let stand at room temperature for 30-40 minutes before cooking
  • Add blueberries and cook on medium heat for 1-2 minutes from both sides,as shown in the video
