OATMEAL Mini-PANCAKES plain or with BLUEBERRIES
Oatmeal Mini Pancakes are sugar-free, gluten-free, and Low Glycemic. They can be made as plain or with blueberries. It is a good breakfast or a healthy snack. Both are healthy and delicious.
Ingredients:
- 2 eggs
- 1 cup 0% Greek yogurt
- 2 tsp pure fructose (or Splenda®)
- Pinch of salt
- ½ Active Dry Yeast® of 5/16 oz.
- ¼ tsp baking powder
- ½ – ¾ cup oatmeal flour, to reach optimal consistency
- Olive oil for cooking
Directions:
- Mix all the ingredients and leave the batter in a warm place for 20-30 minutes.
- Divide into 2 parts. Add 1/3 cup of blueberries in one part.
- Cook them on a medium heat with olive oil.
Weight Loss Help
- Oatmeal flour itself has medium Glycemic Index
- You can serve aside 0% Greek yogurt or/and 100% fruit jam, or/and fresh berries.
- Food to AVOID:
- High GI carbs: honey, maple and other syrups, regular jams with sugar.
- Saturated fats: butter, sour cream or whipped cream
