MINI APPLE PIES
I am a big fan of the individual mini desserts, and for many reasons:

By the time desserts come after dinner, we just physically can not manage a big portion . If we do it anyway, we seriously harm our body, health, and emotions.

Mini desserts are made counted, one per guest. There is no chance for a second round 😉

After dinner, they are all gone. No leftovers. Which means no seducing excuses like “I’ll-just-have-one-more-tiny-mini-bite,” not to mention finishing it all at once.
If it makes sense to you, you are ready to enjoy YOUR personal Mini Apple Pie!
For 10 individual pies:
Ingredients:
- 2 cups almond meal
- 1 tbsp Splenda®
- Pinch of salt
- 1.5 sticks of frozen margarine
- ¼ cup of cold water
Filling:
- 4 apples Granny Smith
- 10 tsp 100% fruit strawberry jam
- 10 tsp brandy or cognac
- 10 tbsp sliced almonds
- Cinnamon
Directions:
- Place the almond meal, Splenda® and salt in a medium size bowl.
- Cut in small bits of frozen margarine.
- Add water and make a dough. Place in a refrigerator for one hour.
- Peel the apples and cut them into thin slices.
- Grease 10 mini pie glass baking dishes.
- Divide dough into 10 pieces, and distribute them (about 1 tbsp each) to 10 mini pie dishes.
- Firm dough manually through the bottom and the walls of mini dishes.
- Place 3 layers of apples’ slices, spread with jam, splash with cognac, top with almond slices, and sprinkle with cinnamon.
- Bake on 400*F for 45-50 minutes.
Weight Loss Help
- The regular flour replaced here with the almonds meal, which Glycemic Index is only 15 (very low).
- There is no saturated fats, sugar or starch in this recipe.
- If you prefer using other than strawberry jam or marmalade, feel free to use it, just choose 100% fruit ones, with the fruit sweetener only.
- This pie is great for breakfast with a cup of decaffeinated tea or coffee, or for dessert after dinner.
