BIRTHDAY CAKE
Birthday Cake for a healthy birthday party!
Ingredients:
For cake:
- 6 eggs
- 2 cups almond meal
- ½ cup pure fructose
For frosting:
- Half-pint (236 ml) of whipping cream
- 2 tsp pure fructose
- 2 tsp instant coffee
- 1 tbsp hot water
Optional:
- For soaking the cake layers: 50 ml Triple espresso vodka or Coffee flavored brandy
- For decoration: add to cream 1 tsp of instant coffee and 1 tbsp of cacao powder
Directions:
Cake:
- Preheat the oven to 350*F (175*C)
- Separate yolks from whites
- Using an electric mixer, whisk yolks with half of the fructose until light and fluffy
- Gradually add almond meal, stirring gently with a stirring whisk
- Using an electric mixer, whisk whites with the second half of fructose until standing picks
- Little by little, add whipped whites to the yolks-nuts mixture, stirring very carefully with the stirring whisk
- Divide the mixture between two round 8-9 inch baking pans, lined with a parchment paper
- Bake for 16 minutes. Pull out cake layers with wax paper and let cool on wire racks. Remove the paper
Frosting:
- Mix instant coffee with 1 tbsp of hot water and let cool
- Using an electric mixer, whip whipping cream with fructose until just holding its shape
- Add the coffee and whip for 1-2 more minutes, until getting homogeneity and nice coffee-cream color
If you choose to soak the layers, brush them with the liquor before frosting
Spread the cream over the top of each layer, stack the layers, frost the sides
If you choose to decorate the cake, save 2-3 tbsp of cream. Add instant coffee and baking cocoa powder to a dark brown color, and decorate as desired
Keep in a refrigerator until serving
