NUTS and DRY FRUITS Flourless CAKE
Nuts and dry fruits cake is flourless, full of flavor, free of any flour, sugar-free, gluten-free, low glycemic, and nutritionally rich.
Ingredients:
- 5 eggs bitten
- 5 tbs Splenda®
- 6 tbsp almond meal
- 2 tbsp flax seeds
- 1.5 cup chopped walnuts
- 1.5 cup dry apricots cut into small pieces
- 1 tbsp of baking soda
- 1tbsp 5% white vinegar
- Cinnamon and almond meal to sprinkle the pan
Directions:
- Preheat oven to 375* F (175* C). Grease a round cake pan. Sprinkle with cinnamon and almond meal.
- In a large bowl beat the eggs with an electric mixer for about 6 minutes until very light and fluffy.
- Beat in Splenda® for 2-3 more minutes.
- Add almond meal, flax seeds, walnuts, and dry apricots. Stir gently.
- Mix baking soda with the vinegar, and add to the cake batter. Stir gently and place in prepared pan.
- Bake for 40-45 minutes, or until wood tooth stick comes out dry.

- Dry fruits used in this recipe have Low or Medium Glycemic Index
