Mix dry ingredients flours, soda, and cream of tartar well
Place the eggs in a deep bowl and beat using a hand electric mixer until light and fluffy. Start adding fructose and continue beating until the texture becomes stronger.
Grate orange zest from ½ orange on a small grater
Squeeze the orange to get ½ cup orange juice
Add orange juice with the zest to the eggs and mix very gently as shown in the video
Start adding dry mixture to the bowl with wet ingredients, continuing tomix very gently until homogeneous texture
Oil a rectangular 7x12-inch baking sheet, and pour the dough into it
Bake in preheated to 350*F oven for about 10-12 minutes, or until toothpick is coming out dry
Make the frosting by beating together cream cheese, sour cream, and fructose until smooth and homogeneous
When the cake base is ready, take it out of the oven and let it cool a little bit
Cut the round shapes, transfer them with a spatula, and let them cool completely
Grate the baked leftovers on a big grater
Place the frosting over one round shape and cover with another one
Place frosting on the sides and the top of mini cakes. Cover with crumbs.
