NUTS and DRY FRUITS Flourless CAKE

Nuts and dry fruits cake is flourless, full of flavor, free of any flour, sugar-free, gluten-free, low glycemic, and nutritionally rich.

Ingredients:

  • 5 eggs bitten
  • 5 tbs Splenda®
  • 6 tbsp almond meal
  • 2 tbsp flax seeds
  • 1.5 cup chopped walnuts
  • 1.5 cup dry apricots cut into small pieces
  • 1 tbsp of baking soda
  • 1tbsp 5% white vinegar
  • Cinnamon and almond meal to sprinkle the pan

Directions:

  • Preheat oven to 375* F (175* C). Grease a round cake pan. Sprinkle with cinnamon and almond meal.
  • In a large bowl beat the eggs with an electric mixer for about 6 minutes until very light and fluffy.
  • Beat in Splenda®  for 2-3 more minutes.
  • Add almond meal, flax seeds, walnuts, and dry apricots. Stir gently.
  • Mix baking soda with the vinegar, and add to the cake batter. Stir gently and place in prepared pan.
  • Bake for 40-45 minutes, or until wood tooth stick comes out dry.
