CHOCOLATE COFFEE CUPCAKES
Chocolate coffee cupcakes are simple and full of flavor! Green decoration makes them an ideal dessert for Christmas and New Year parties. They are sugar-free, gluten-free, and low-glycemic.
CHOCOLATE COFFEE CUPCAKES
Ingredients
Dry ingredients:
- 1/2 cup almond flour
- ½ cup oatmeal flour
- 2/3 cup fructose
- 2/3 cup unsweetened cocoa powder
- 1.5 teaspoons baking powder
- pinch of salt
Wet ingredients:
- 1 egg
- 1/2 cup buttermilk
- 2 Tbsp plain Greek yogurt
- 1/3 cup vegetable oil
- 1/2 tablespoon vanilla extract
- add 1/2 cup coffee
For Frosting:
- butter unsalted SOFT 1 stick
- cream Cheese SOFT 1 pack
- ½ cup fructose
- green food color
Instructions
- Preheat oven to 350°and line 12 muffins tin with liners
- Mix all dry ingredients in a salad bowl
- Using an electric mixer, start mixing wet ingredients, adding one afteranother, and continuing mixing
- In the end, add the coffee
- Start adding dry ingredients in three parts, continuing mixing with an electric mixer
- Fill cupcake liners 3/4 full with batter
- Bake 18-20 minutes until slightly a toothpick inserted into the middle comes out clean
- Let cool completely
- Decorate with frosting and raspberries
