SEAFOOD PASTA

Seafood pasta recipe, where I use durum semolina angel hair pasta. The GI is medium, the combination with shrimp, calamari, and scallops is amazing!

PASTA with SCALLOPS, CALAMARI, and SHRIMP

Ingredients

  • 1 pound durum semolina spaghetti
  • 1 pound scallops raw
  • 1 pound shrimp raw
  • 1 pound calamari raw

For marinade:

  • lemon small
  • 1-2 garlic cloves
  • 2 fresh oregano chopped
  • Salt and black pepper

Instructions

Make a marinade:

  • Squeeze the juice out of the lemon and cut the rest of the lemon into thin slices 
  • Add olive oil, chopped garlic, oregano, salt and pepper 
  • Place seafood into the marinade for 30 minutes, mixing periodically If not covered, add more olive oil 

Cook spaghetti Al dente (do not overcook)

  • Heat a big thick pan and place in the seafood with marinade. Cook for 5 minutes on high heat. 
  • Add drained pasta, mix well gently and cook for another 5 minutes
