WHOLE GRAIN PASTA with PESTO SAUCE

Whole grain pasta has a Medium Glycemic Index of 40. When you make pesto sauce, skip traditionally added parmesan cheese. Also, do not sprinkle with cheese your final product.

WHOLE GRAIN PASTA WITH PESTO SAUCE

Ingredients

  • 1 box of whole grain pasta (I used rutini for this recipe)
  • 2 cups fresh basil leaves
  • 1 garlic clove
  • 1 cup pine nuts
  • 1 cup olive oil (I used the dipping oil for this recipe)
  • salt and pepper to taste

Instructions

  • Cook the pasta al dente, not longer than 6-7 minutes
  • Place basil leaves and garlic in a chopper and pulse several times
  • Add pine nuts and pulse again
  • Add olive oil and pulse until the pesto is blended into a slightly coarse mixture
  • Add salt and pepper to taste​
