LOBSTER STUFFED MUSHROOMS
Lobster stuffed mushrooms is a fancy Low Glycemic appetizer for any occasion. We’ve made them for Thanksgiving Dinner.
Portobello mushrooms stuffed with lobster meat
Ingredients
9 medium size portobello mushrooms stems removed
For stuffing:
- 1/2 pound lobster meat chopped
- 3 oz cream cheese
- 1 shallot chopped
- 3 green onions for garnish chopped
- 1 tsp Old Bay seasoning
- 1/2 cup Horseradish cheese shredded
- Olive oil for cooking
Instructions
- Cook shallots in olive oil until golden-brownish
- Add all other stuffing ingredients to a skillet, continue cooking and stirring for 2-3 minutes
- Spoon the mixture into the mushrooms cups, sprinkle with cheese and green onions
- Cook in a preheated to 395*F oven for 8-10 minutes, or until the cheese has melted.
