Place both kinds of meat into a big salad bowl
Grate zucchini on a big grinder, press it to remove the extra liquid and add it to the meat
Cut red pepper and scallions, add to meat mixture
Add salt, pepper, and mix well
Sprinkle the loaf pan with olive oil spray and fill 2/3 of that with the meat mixture
Create ½ inch deep bedding into the meat
Cut sausages into small pieces and place ½ into created bed
Cut the extra white edges from eggs, and place them back-to-back, as shown in the video
Cover eggs with the rest of the sausages, leaving a small amount for decoration
Transfer the rest of the meat mixture to the pan
Cut olives
Place olives and the rest of the sausages on top of the meatloaf
Cook in preheated to 430*F oven for about 40 minutes
