MEATLOAF WITH EGG FOR CHRISTMAS

Ingredients

  • 1 pound ground beef
  • 1 pound ground chicken
  • 1 small zucchini
  • 1 bunch of scallions
  • ½ sweet red pepper
  • 1 egg
  • salt & black pepper

For staffing:

  • 3 hard-boiled eggs cut into half longwise
  • 2 smoked sausages
  • 10 pitted black olives

For cooking:

  • aluminum foil 1.5 pounds loaf pan
  • olive oil cooking spray

Instructions

  • Place both kinds of meat into a big salad bowl
  • Grate zucchini on a big grinder, press it to remove the extra liquid and add it to the meat
  • Cut red pepper and scallions, add to meat mixture
  • Add salt, pepper, and mix well
  • Sprinkle the loaf pan with olive oil spray and fill 2/3 of that with the meat mixture
  • Create ½ inch deep bedding into the meat
  • Cut sausages into small pieces and place ½ into created bed
  • Cut the extra white edges from eggs, and place them back-to-back, as shown in the video
  • Cover eggs with the rest of the sausages, leaving a small amount for decoration
  • Transfer the rest of the meat mixture to the pan
  • Cut olives
  • Place olives and the rest of the sausages on top of the meatloaf
  • Cook in preheated to 430*F oven for about 40 minutes
