Cut onion into rings and cook in olive oil until golden brown. Add somesalt and pepper, remove from the pan, and set aside
Cut Portobello into long slices and cook in the same skillet for 30-40 sec each side. Add some salt and pepper remove from the pan, and set aside
Cut chicken breast into ½ inch thick slices, and cook in the sameskillet for 1-2 minutes each side, until crust is created
Arrange chicken in a baking pan. I used a round pie pan in this video
Place about 1 tbsp of onion on each slice
Place 1-2 Portobello slices on top
Grate the cheese and sprinkle with it each slice
Bake 10-12 minutes at 375*F
Serve with any fresh salad of your choice or with vegetable sauté
