OMELET with CHEESE and VEGETABLES
Omelet is a good choice on weekends when you have some more time for cooking. Choose a protein-fat breakfast at least once a week. Omelet with Cheese and Vegetables is a perfect choice for lunch or a light dinner.
Ingredients for 2 people:
- 4 eggs
- 2 tbsp sour cream
- ½ chopped sweet pepper of any color
- 2 chopped scallions brunches
- Salt, pepper, nutmeg
- Olive oil for cooking
- 2 tbsp manually grated cheese (Mozzarella, Cheddar, Gouda, or Swiss)
Directions:
- Whisk well eggs with sour cream
- Season with salt, pepper, tiny pinch of nutmeg, and whisk again
- Mix in sweet pepper with scallions
- Heat a nonstick skillet over medium heat, add olive oil
- Pour eggs-vegetables mixture into the skillet, cover, and lower the heat.
- Cook covered for 2-3 minutes, on very low heat.
- When ready, open the cover, sprinkle the omelet with grated cheese, cover again, and turn the heat off.
- The cheese will melt in a minute, and the omelet will be ready to serve
