CAULIFLOWER PATTIES
Cauliflower is chosen over broccoli by many people including me. From a nutritional perspective, they are both very healthy vegetables, therefore it’s just a matter of taste. Broccoli has a stronger, greener flavor, while cauliflower is more delicate and flashy. Also, I think cauliflower offers us more cooking options.

Cauliflower Patties
Ingredients
- 1 small to medium size cauliflower
- 1/2 cup of chopped scallions
- 1/4 cup chopped parsley
- 2 eggs
- Salt and black pepper
- 1 cup of almond meal or sprouted flour
- Olive oil for cooking
Instructions
- Boil cauliflower for 5 minutes or until tender, drain and mash it
- Cook scallions and parsley on olive oil until brownish, let it cool and add to the cauliflower
- Mix in eggs, salt, pepper, and ½ of almond meal (or sprouted flour)
- Form patties with the mashed cauliflower mix, coating them with the rest of the almond meal (or sprouted flour)
- Cook on olive oil on a medium heat until golden brown and crispy on both sides.
Notes
Cauliflower has a low GI of 15, it's a good dietary fiber. Food that you can add -

*Fish
*Sour cream or yogurt
*Any fresh or cooked vegetables
