ZUCCHINI SOUP PURE
Zucchini soup can become a great addition to Thanksgiving dinner, making it healthier. Pumpkin has a high GI of 75, which makes traditional Thanksgiving meals problematic. Replacing it with low glycemic zucchini (20) lets us enjoy holiday dinner without sacrificing our health and avoid gaining after-holiday pounds.
ZUCCHINI SOUP PURE
Ingredients
- 2 big zucchinis
- 1 big tomato
- 1 big onion
- 1 sweet orange pepper
- 2/3 cup of water
- 1 cup of light cream
- ½ pound of yellow cheese like Cheddar or Monterey
- dill/ parsley
- salt/ black pepper/ paprika
- olive oil for cooking
Instructions
- Unpeel zucchinis, and cut into medium pieces as shown in the video
- Transfer to a pot, pour the water and cook on medium heat for about 10 minutes or until soft
- Cut onion, tomato, and pepper
- Cook onion on olive oil until soft and goldish,then add tomato and pepper. Cook for about five minutes.
- Transfer vegetables into a pot with zucchini, mix, remove from the heat
- Using a hand mixer, pure everything until the homogenous structure
- Place back to the heat, add cream
- Mix well, bringing to boiling, but do not boil
- Remove from the heat, transfer to individual soup bowls
- Serve with grated cheese and chopped greens
