Cut zucchini longwise
Using a melon baller scoop, get the internal part into a bowl, and chop it into smaller pieces
Cut scallions into small pieces, and keep the green parts aside
Start cooking the white parts of the scallions in olive oil
Cut peppers and add to a skillet with onions
Add salt, black pepper, and chili powder to taste
Take out of the skillet 2/3 of the vegetable mix and keep aside
To the rest of the veggies, add ground meat and keep stirring. It doesn’t require much time to cook.
Cut smoked kabanos sausage, add to the veggies/meat mixture in the skillet, and turn the heat off
Place four zucchini boats into a baking form
Fill two with veggies mix, and the other two with a meat-veggies mix
Sprinkle with grated parmesan cheese
Bake in a preheated 400*F oven for about 15 minutes
