OATMEAL CREPES with FARMER CHEESE and STRAWBERRY SAUCE
Oatmeal crepes are quick and easy to make. The change is in substituting High Glycemic components with Low GI products. Adding the farmer cheese and a strawberry sauce makes them irresistible!
OATMEAL CREPES WITH FARMER CHEESE AND STRAWBERRY SAUCE
Ingredients
- ½ cup of dry milk
- 2 cups of water
- ½ cup olive oil
- 2 eggs
- 2 cups Oatmeal flour
- ½ tsp baking soda
- 2 tsp pure fructose or Splenda
- 2 dashes of salt
For filling:
- 1 pound of fat-free farmer cheese
- 2 tsp of any artificial sweetener
- 1 tsp of cinnamon
For Sauce:
- 2 cups of fresh strawberries
- 1-2 tsp of any artificial sweetener
Instructions
- Mix all ingredients in amedium bowl and beat well until well combined. The batter may look too liquid,but oatmeal flour will swell.
- Leave the batter at room temperature for at least 15-20 minutes
- Meanwhile, mix the stuffing ingredients, and make a sauce, as shown in the video
- Before cooking, beat the batter again. Add some water if it is too thick or some oatmeal flour if it is too liquid.
- Cook oatmeal crepes in a small non-stick frypan, over high and then medium heat, about 1 minute on each side or until golden brown
Notes
Since there is olive oil in a batter, crepes should not stick to a pan. However, I recommend sprinkling a pan with a bit of olive oil before cooking the first one.
