COCONUT PANCAKES
Coconut pancakes are made with coconut flour, a perfect substitute for wheat flour for kids. Pancakes are easy to make; they are soft and fluffy.

- 3 eggs
- ¼ cup unsalted butter melted (see note for dairy-free)
- ¼ cup heavy cream
- 1 tbsp of fructose
- ¼ teaspoon salt
- ½ teaspoon vanilla extract
- ¼ cup coconut flour
- ½ teaspoon baking powder
- olive oilfor cooking
Whisk together butter, cream, fructose, salt,eggs, and vanilla extract.
Add coconut flour and baking powder.
Let batter sit to thicken for 10-15 minutes.
Heat the skillet over medium heat.
Cook on olive oil, placing the batter into the skillet about 2 inches apart.
