MEAT and CAULIFLOWER RICE CASSEROLE
Meat casserole has three layers: green, brown, and yellow. It is very light but fulfilling. Accompanied by a green salad, it creates a delicious and healthy dinner.
MEAT AND CAULIFLOWER RICE CASSEROLE
Ingredients
- 1 pound of ground meat (I took ½ beef and ½ bison meat)
- ½ of big onion
- 2-3 branches of scallions
- 1 pound of cauliflower rice defrosted
- 1 cup of defrosted or fresh spinach
- 2 eggs
- ½ pound of grated yellow cheese
- ½ tsp salt
- ½ tsp turmeric powder
- ½ tsp chili powder
- Olive oil for cooking
- Thyme for sprinkling the top (optional)
Instructions
- Cut the onion and scallions
- Cook in olive oil until golden brown
- Start adding meat in small portions and constantly mix to prevent big meat pieces
- Add salt, turmeric, and chili powder
- Cook for about one minute, do not overcook
- Add eggs and cheese to the cauliflower rice mix together. Keep about 2 tbsp of cheese to sprinkle on top
- Divide into two parts
- Add spinach to one part
- Place the green mixture on the bottom of a baking dish about 9х9 inch
- Place meat mixture and a second layer
- Place cauliflower mixture on top, press with a spatula, and sprinkle cheese on top
- Sprinkle with thyme if desired
- Bake for about 30 minutes in preheated 375*F oven
