BUCKWHEAT WITH EGGPLANTS

- 1 cup buckwheat
- 2 cups of water
- 1 eggplant
- salt
- olive oil for cooking
Boil buckwheat in 2 glasses of water for about 6 minutes. Turn off the heat and leave it covered with a lid.
Cut the eggplant into thin slices, fry in olive oil on both sides, season with salt
Place buckwheat on a plate and put cooked eggplant on top of it. Pour over the olive oil from the skillet.
