NICOISE PASTA SALAD
Nicoise salad originated in the French city of Nice. Traditionally it was made of tomatoes, hard-boiled eggs, olives, anchovies, or tuna and dressed with olive oil and vinegar. It became popular worldwide and has been made in many other ways now.

For salad: 1/2 pound of rotini pasta 1/4 pound of green beans 5-oz. can of salmon in water, drained 1 cup cherry tomatoes, cut longwise 4-5 kalamata olives , chopped 1 anchovy ¼ of garlic clove chopped ¼ cup chopped fresh parsley ¼cup chopped basil For the dressing: 6 tbsp olive oil 2 tbsp red wine vinegar ¼ tsp salt
Bring a large pot of salted water to boil over high heat.
Add pasta and cook until almost tender, about 5 minutes.
Cut green beans, as shown in the video.
Add green beans to the pot and continue to boil until beans and pasta are al dente tender, about 2 minutes longer.
Drain and put aside to cool.
Combine tomatoes, salmon, anchovy, garlic, olives, parsley, and basil in a large bowl.
Make a dressing by whisking together oil, vinegar, and salt.
Add cold pasta with beans to the salad bowl and pour the dressing.
