BISON and VEGETABLE ROULADE
Bison meat is leaner than beef and is a healthier choice if you want to reduce your cholesterol. This roulade is an excellent choice for any gatherings, especially Christmas and New Year Holiday Dinners.
BISON AND VEGETABLE ROULADE
Ingredients
- 1 pound of bison ground meet
- 2 zucchinis (medium size)
- 2 tomatoes
- 1 sweet onion
- 1 box (8 oz) Baby Bella mushrooms
- ½ pound yellow cheese
- 2 eggs
- 2 tbsp oat flour
- 1-2 tsp of Herbs of Provance
- salt & black pepper
- olive oil for cooking
Instructions
For the crust:
- Grate zucchini and 2/3 of the cheese, place toa salad ball
- Add flour, eggs, herbs, salt, pepper to taste, and mix well
- Transfer the mixture to 15”x10”baking sheet lined with baking paper
- Distribute the mix equally as shown in the video
- Place in preheated to 375*F oven for 25-30 minutes
For the filling:
- Cut onion, mushrooms, and tomatoes
- Start cooking onion on olive oil until the goldish color
- Add mushrooms and cook for 3-5 more minutes
- Add tomatoes and cook the mixture for about 5 more minutes, stirring
- Cook bison ground meet in a different skillet on olive oil, constantly stirring, brеaking into small pieces until the meat is well-done
- Grate the rest 1/3 of the cheese
- Add meat to vegetables, add cheese, mix well
- Take the crust out of the oven
- Transfer the paper with the crust to a wooden board
- Distribute the meat-veggies mixture equally over the crust
- Make a roll as shown in the video and transfer to a serving plate
