RED CABBAGE SALAD
Red cabbage salad with dill is made with sugar-free marinade. Olive oil that we use for salads, can be also heated with spices. When you do that, the quality of OLIVE oil stays the same, but the salad will get a nice spicy taste. This salad is good as a side dish for meat/ fish/poultry.
RED CABBAGE SALAD
Ingredients
- 1 small red cabbage
- 1 big sweet onion
- 1 bunch of dill
Marinade
- 1/2 cup olive oil
- 1/2 cup white vinegar
- 2 bay leaves
- 1 tbsp salt
Instructions
- Cut cabbage and onion
- Heat olive oil and vinegar in a small pan. Add bay leaves and salt. Continue heating until a liquid is close to boiling, but do not boil. Let it cool for 5-10 minutes.
- Pour the mixture over vegetables, mix well.
- Leave to settle at room temperature for several hours, mixing periodically. Cabbage becomes softer and the amount is getting smaller.
- Place into a refrigerator. The salad is ready to eat on the next day. It stays fresh for several weeks.
