Arugula Radicchio Salad with Parmesan Cheese and Pumpkin Seeds

ARUGULA RADICCHIO SALAD with PARMESAN CHEESE and PUMPKIN SEEDS.
Eating a simple vegetable salad may still leave you hungry. Adding some Parmesan cheese and pumpkin seeds makes a difference; such salad will satisfy your appetite much better. This appealing and super yummy salad can be also served as a side dish.
Ingredients:
- 1 red radicchio
- 2 cups arugula leaves
- 1 big tomato
- 2 small cucumbers
- 1 yellow sweet pepper
- 1 red sweet pepper
- 1/2 sweet Vidalia onion
- 4 tbsp grated Parmesan
- Fresh juice of ½ small lemon
For dressing:
- 2-3 tbsp Olive oil
- 2-3 tbsp Sunflower oil
On top:
- 6 tbsp pumpkin seeds (or sunflower seeds)
Directions:
- Cut vegetables and mix all the ingredients.
- Squeeze the lemon juice over the salad.
- Add the oils and stir gently.
- Place pumpkin seeds in a dry non-stick frying pan over low heat. Toast them for 3-4 minutes, constantly shifting around until they become slightly brown.
- Let them cool and place over the salad

- The Glycemic Index of all ingredients is very low, only 15.
- Usually, the lemon juice substitutes salt. Try to avoid adding salt and see if it works for you. This trick is not directly related to Weight Loss, but to your general health. It also keeps the salad dryer, preventing it from over juicing.
- This yummy and healthy salad is great as it is or as a side dish. If you make it for lunch, you can have:

Please avoid adding:
- Croutons
- Raisins
- Cranberry
