MEATBALLS with VEGETABLES in INDIVIDUAL CERAMIC BOWLS
Meatballs are an excellent substitute for traditional Russian pelmeni (meat ravioli). No need to add a heavy dough with a high glycemic index. Making meatballs with low glycemic veggies is a much healthier way to start a new year.
MEATBALLS WITH VEGETABLES IN INDIVIDUAL CERAMIC BOWLS
Ingredients
- 1 pound of ground beef
- bunch of scallions
- 2 big mushrooms
- 1 white zucchini (or yellow squash)
- 1/3 of sweet red pepper
- 1/3 of sweet yellow pepper
- salt, black pepper, red paprika
Instructions
- Cut white scallions’ ends off and chop them in a chopper
- Add chopped scallions to the ground meat, spice with salt, pepper, and paprika
- Mix well and make balls
- Place them in boiling water and cook for about 5 minutes
- Cut vegetable into small cubes
- Place 6-8 meatballs in each bowl
- Add vegetables, pressing them in as shown in the video
- Add salt, pepper, and bay leaf
- Cook in preheated to 370*F oven for 25-30 minutes
- When ready, sprinkle with greens if desired
