HAMANTASCHEN or OZNEI HAMAN
Hamantaschen is a traditionally sweet Purim pastry but can be also adjusted to our Low Glycemic lifestyle.
Ingredients:
- 1 ½ cup oats flour
- 1 ½ cups sprouted whole wheat flour
- 1/3 cup Splenda® (or ¼ cup pure fructose)
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1 stick of cold margarine
- 3 eggs
- 1 tsp vanilla extract
- Lemon peel from ½ lemon
Directions:
- In a medium bowl, stir together dry ingredients (first five).
- Using a knife, to blend in the margarine and make a crumbly dough by hands.
- Beat eggs with vanilla, add lemon peel.
- Pour the eggs mixture into crumbs, making a dough.
Cover with nylon wrap and let to rest for about an hour. Meanwhile, make the fillings.
I am not giving exact measures for fillings since you can use many different combinations.
Two fillings which I used were:
- Chopped apricots with walnuts.
- Boiled poppy seeds with melted chocolate
Other options:
- Almond meal with 100% fruit jam
- Chopped prunes
- Chopped prunes, mixed with chopped walnuts or almonds
Directions:
- Divide a dough into 3-4 parts for easier rolling.
- Roll out a dough and cut into circles using a glass 2 – 2.5 inches in diameter.
- Place ½ tsp of filling on each circle, and then wrap it up into a triangular shape.
- Place on a baking sheet covered with non-stick baking paper, and bake 13-15 minutes on 390*F (180*C).
