SWEET PEPPERS with CHEESY STUFFING
Sweet peppers are a colorful appetizer that can be a great addition to the holiday dinner. Making it 1-2 days ahead until flavors are incorporated is also beneficial for hosts.
SWEET PEPPERS WITH CHEESY STUFFING
Ingredients
- 3-4 thin sweet peppers, preferable different colors
- 1 (8oz) plain goat cheese log
- 2-3 tablespoons 5% Greek yogurt
- 2 tablespoons of finely graded yellow cheese like Monterey, Swiss, or Cheddar
- 1 big garlic clove pressed
- ½ dill and chive finely chopped
Instructions
- Remove a stem and seeds from the peppers
- Mix well all ingredients until getting a smooth stuffing mixture
- Stuff peppers with the mixture, pressing it firmly into peppers
- Place in a container and keep in a refrigerator for overnight
- Before serving cut into slices ½ inch thick. Arrange on a plate in one layer
Notes
You can use other herbs of your choice.
