SWEET PEPPERS WITH CHEESY STUFFING

Ingredients
3-4 thin sweet peppers, preferable different colors
1 (8oz) plain goat cheese log
2-3 tablespoons 5% Greek yogurt
2 tablespoons of finely graded yellow cheese like Monterey, Swiss, or Cheddar
1 big garlic clove pressed
½ dill and chive finely chopped
Instructions
Remove a stem and seeds from the peppers
Mix well all ingredients until getting a smooth stuffing mixture
Stuff peppers with the mixture, pressing it firmly into peppers
Place in a container and keep in a refrigerator for overnight
Before serving cut into slices ½ inch thick. Arrange on a plate in one layer
Notes
You can use other herbs of your choice.
