SWEET PEPPERS WITH CHEESY STUFFING

Ingredients

  • 3-4 thin sweet peppers, preferable different colors
  • 1 (8oz) plain goat cheese log
  • 2-3 tablespoons 5% Greek yogurt
  • 2 tablespoons of finely graded yellow cheese like Monterey, Swiss, or Cheddar
  • 1 big garlic clove pressed
  • ½ dill and chive finely chopped

Instructions

  • Remove a stem and seeds from the peppers
  • Mix well all ingredients until getting a smooth stuffing mixture
  • Stuff peppers with the mixture, pressing it firmly into peppers
  • Place in a container and keep in a refrigerator for overnight
  • Before serving cut into slices ½ inch thick. Arrange on a plate in one layer

Notes

You can use other herbs of your choice.
