PASTA TRICOLOR SALAD with BEANS 

Pasta tricolor is made with whole-grain durum semolina. Don’t be afraid to make this salad. The whole grain pasta has a medium GI of 40. Feel free to eat it with vegetables, beans, or grains. This salad is a convenient lunch you can bring to a workplace.

TRICOLOR PASTA SALAD WITH MARINATED VEGGIES

Ingredients

  • 1/2 pound of tricolor whole wheat routines
  • 1 can of chickpeas
  • 1 can white beans
  • 1 can red beans
  • 1 cup of assorted marinated peppers
  • Several black olives (optional)
  • salt, black pepper
  • 1 tsp of balsamic vinegar (pomegranate or another)
  • olive oil

Instructions

  • Cook routine al dente, 6-7 minutes. Do not overcook! Let it coolcompletely.
  • Cut marinated veggies
  • Mix everything in a salad bowl
  • Add salt, pepper, balsamic vinegar, and olive oil
