CHICKPEAS and TUNA SALAD

Chickpeas and tuna are a great protein addition to green salads. Such a salad is fulfilling, full of fiber, vitamins, and healthy protein. It’s suitable for lunch, dinner, and picnics. Practice a Low Glycemic Index lifestyle. NO carbs, gluten-free, keto-friendly, and flavorful.

Ingredients

  • 3-4 leaves of Butterhead Lettuce
  • 3 branches of green onions
  • 1 cucumber middle size
  • ½ green sweet pepper
  • ½ red sweet pepper
  • 1 can of chickpeas
  • 1 can Albacore tuna
  • salt and ground black pepper
  • ½ of fresh lemon
  • 2-3 sun-dried tomatoes in oil
  • 2-3 tbsp of avocado oil
  • fresh oregano to garnish

Instructions

  • Cut lettuce, cucumber, and peppers into thin strips
  • Add chickpeas, salt, and pepper
  • Mix gently and transfer to a salad bowl
  • Decorate the walls of the salad bowl with lettuce leaves as shown on the video (optional)
  • Top with the Albacore tuna from the can
  • Sprinkle with fresh lemon juice
  • Garnish with sun-dried tomatoes and oregano
  • Top with avocado oil
