SHRIMP SALAD with BEANS
Shrimp salad with beans is a nutritional appetizer for Holiday Dinner. It is rich in protein and healthy amino acids.
SHRIMP SALAD with BEANS
Ingredients
For the salad:
- 1 head of butter lettuce
- ½ pound of raw shrimp
- ½ can (15.5 oz) garbanzo beans drained
- ½ can of red beans drained
- ½ can of white beans with original, NOT drained
- 1 big garlic clove
- lemon pepper and white pepper
- olive oil for cooking
For marinade:
- ¼ cup of olive oil
- 2 tbsp fresh lemon juice
- salt and black pepper
Instructions
- Combine the beans in a big salad bowl, as shown in the video
- Mix all marinade ingredients and pour it over the beans
- Stir gently and put aside to marinade
- Clean the shrimp, leaving the tails on
- Heat the oil, add shrimp, and cook for 1 minute from both sides until golden. Do not overcook!
- Remove from the heat, add chopped garlic, and mix gently
- Spice with lemon pepper and white pepper
- Add shrimp to the beans
- Cut the lettuce and place it on the serving plate
- Cover with the shrimp-beans mix, and pour the marinade over
- Garnish with lemon slices
