SHRIMP OCTOPUS CEVICHE
Shrimp octopus ceviche I first tried in Costa Rica, where it is trendy. Here is my own version of this light, healthy dish.
SHRIMP OCTOPUS CEVICHE

- ½ lb cooked shrimp (no tails)
- ½ lb cooked octopus
- 1 tomato
- 3 tbsp parsley
- 1/2 medium red onion
- 1 cup fresh lime juice
- 1 tsp of salt
- ½ tsp of black pepper
Slice shrimp and octopus into ¼ inch pieces
Finely chop the parsley, cut red onion and tomato intosmall cubes
Place everything into a large bowl and combine
Sprinkle with salt and pepper
Pour the lime juice and mix gently
Cover and refrigerate for 2-3 hours to let the flavors blend
