GREEN BEANS SALAD with HAM and EGGS
Green beans combined with ham and eggs satisfy your appetite better because, in addition to veggies, it contains proteins. This salad is good either for an energy-restoring lunch or for a light nutritional dinner.
Ingredients:
- ½ pound frozen green beans, boiled for 2-3 minutes and cooled
- 2-3 marinated pickles cut into thin 1 inch long strips (please do not replace them with regular salty pickles, the outcome will be different)
- ¼ of a medium-size sweet onion, cut into half-rings and rinsed with cold water
- 1/3 pound smoked turkey ham cut into thin 1 inch long strips
On top:
- 2 hard-boiled eggs cut into 4 pieces
- 5-8 cherry tomatoes cut in halves
Dressing:
- 1 garlic clove
- 1/3 tsp black pepper
- ½ tsp red paprika
- ¼ tsp of pure fructose or Splenda®
- 6-7 tbsp of olive oil
- 3 tbsp of 5% vinegar
- ¼ tsp kosher salt
- ½ tsp Dijon mustard (do your best to find sugar-free mustard)
Gently stir all the ingredients and place them into a serving salad dish. Place eggs and cherry tomatoes on top. Mix and slightly bit the dressing ingredients. Pour the dressing over the salad right before serving.
