SUMMER SALAD
Summer is a good time to enjoy salads! Make them more nutritious by adding chickpeas, green peas, and Parmesan cheese.
SUMMER SALAD

For the salad:
- ½ box of baby arugula
- 1 big sweet red pepper
- 2-3 tbs fresh parsley
- 1 can of chickpeas
- ½ can of green peas
For dressing:
- 2 tbsp of lemon-flavored olive oil
- ½ tbsp garlic-flavored olive oil
- 1 tsp apricot balsamic vinegar
- ½ of lemon for squeezing lemon juice
- salt & black pepper
Place all salad ingredients in a big salad bowl
Mix all dressing ingredients in a small measuring cup
Pour the dressing over the salad and mix carefully from the bottom to the top
Grate parmesan cheese and sprinkle it over the salad
