RASPBERRY DESSERT

Ingredients

  • 3 eggs
  • 3.5 oz crème fraiche
  • 2 tbsp fructose (plus a little for a pan)
  • 1 tbsp of Raspberry liquor (or brandy  or cognac)
  • ½ cup almond flour
  • fresh raspberries
  • olive oil for a pan

Instructions

  • Break the eggs in a salad bowl
  • Add cream fraiche and fructose
  • Using a hand mixer, beat until the mixture is smooth
  • Pour in raspberry liquor and beat again
  • Oil a baking dish and sprinkle with fructose
  • Place the raspberries on the bottom of the pan and pour in the batter
  • Bake 25-30 minutes in preheated to 350* F oven
